Some say it’s his swagger, others his unfailing kilt, but the real reason that Ian Thornton is the best bartender in the IE is dude experiments like a witch with her potions. The innovator has been tending bar for seven years, and has been a mainstay at the Riverside Killarney’s since it opened last June. Ffavorite words he likes to hear? “Make me something good.” That’s when he gets to elixin’ and a mixin’. The Irish are known for their tempers, but a good Guinness pourer, according to Thornton, requires “time, patience and the right glass.” These are the kinds of hands you’re in. If you see him behind the booze deck at Killarney’s, congratulate him not only on being the area’s best bartender, but on becoming a daddy—Thornton just had a baby girl this past week. A toast!
